Amanda’s Pi Day Spinach and Cheese Super Pie

Ingredients

  • Baby Spinach – 3 cups raw
  • Asparagus – about 10 stalks
  • Red Potatoes – 1 1/2 lbs small boiled and cut into small cubes
  • Unsweetened Soy Milk – 1/2 cup
  • Jalapeños – 2
  • Goat Cheese – 2 cups crumbled
  • Seriously Sharp Cheddar Cheese – 4 oz. cut into small cubes
  • Parmesan Cheese – 2/3 cups shredded
  • Pie Crust – either make or buy

Directions

1. Place pie crust into 9 inch glass pie dish

2. Place 1 1/2 cups raw baby spinach, 1/2 cup unsweetened soy milk and 2 jalapeños into a blender and blend until smooth.

3. Place blended mixture into a large bowl and add potatoes, goat cheese, and seriously sharp cheddar cheese.  Mix well.

4. Place asparagus stalks on the pie crust covering the entire bottom.

5. Sprinkle 1/3 cup of the parmesan cheese over asparagus.

6. Pour pie mixture over asparagus and cheese.

7. Sprinkle 1/3 cup parmesan cheese over pie.

8. Place pie in preheated 375 degree oven and bake for 30-40 minutes.
